What are the odds of finding an excellent vegan restaurant in the town of Ajijic?

My daughter lives in West Hollywood, California and is a health fanatic. I visit and stay with her several times a year where we go out to vegan and vegetarian restaurants daily. She shops at organic and natural food stores like Whole Food Markets and Erewhon, and over the last few years I have become quite fond of health focussed restaurants. I moved to Ajijic in April 2017 and have been searching for health focussed restaurants since my arrival. To my delight I recently discovered Machi Ma’ on the Carretera close to the XOXO.

Although husband & wife, Jorge & Jessica Ramos, were born in Guadalajara what better place to open their health focussed restaurant than Ajijic which for centuries has been known for its therapeutic waters and healthy climate. This lovely couple and their new baby boy “Karun” (born in February) each brings their talents to create not only a healthy alternative in eating but in creating a healthy atmosphere in which to enjoy your meal. Jorge worked in restaurants in Guadalajara and New Zealand. He brings the delicious flavors of México and international cuisine to the mix. Jessica, a licensed nutrionist for 12 years and a practitioner in alternative medicine, message therapy, reiki and yoga, brings the focus of restaurant. As for baby Karun he adds to the atmosphere of “New Life”. Together they create a unique and healthy dining experience for body and soul.
Machi Ma’ offers high quality vegan (~85%) and vegetarian (~15%) cuisine that equals the best restaurants in the health focussed areas around Hollywood and San Francisco. The menu is varied and extensive. I will let the menu speak for itself but will simply echo the great reviews given by all that have had the good fortune to partake of this extraordinary gem of healthy living.
In addition: Cooking classes are open to the public during the high season from November through May, or you can schedule a private class as well. And lastly a wonderful “Vegan Mexican Dinner” for 30+ people can be scheduled for $450 pesos per diner.

Can't stay away front this place apparently !!
We have been in Ajijic for a week and have been to this wonderful restaurant 3 times for breakfast. Very fresh a delicious food! My favorite was the waffle with strawberries, coconut and cacao nibs. And the staff is so friendly!
